Welcome back to the blog! I have another Freezer meal for you today! This one is a hot commodity in my house!

Breakfast burritos are a great freezer meal because they are quick and easy to make. There are also so many different varieties that you will never get sick of them! Or at least, we don’t. 😉

Prepping Your Ingredients

Picking your ingredients is the fun part to making breakfast burritos. Just pick the ingredients you want and chop them up.

Here are some ideas to get you started: potatoes, rice, onions, green onions, shallots, garlic, peppers, beans, ham, sausage, bacon, cheese. The list is endless! Add whatever you like into your breakfast burritos.

There isn’t an exact science to which order you cook your ingredients but here is my preferred method.

  1. Start with the ingredients that take the longest to cook. I started with the potatoes. Once they cooked for a bit, I added the onions to saute.
  2. Add any ingredients that need to just be warmed after all other ingredients have been cooked and before adding the eggs. Spices can be added at this point.
  3. Add the eggs (yes, I add them over the other ingredients. It helps the burritos not fall apart).
  4. Add any cheese or sauces when the eggs are almost all the way cooked.

This is where it all comes together! I prep my tortilla shells before I start cooking so they are ready to go. To do this, I put a tortilla shell on a piece of foil. I continue to add foil then tortilla shell until I’ve set out enough shells (about 1 per egg used).

When it is time to fill the shells, I put the stack of tortilla shells right next to the pot. Then, I scoop a small amount into the shell. After I roll the shell, I roll the foil underneath it and set the burrito aside.

This process continues until all of the burritos are made and there is a nice sized pyramid of burritos ready to go into the freezer.

Burritos take about 2 minutes to heat in the microwave from frozen.
