This stew is one of my favorite go-to recipes that I’ve made for years! I hope you enjoy this recipe as much as I do!
Beef and Barley Stew
Ingredients
- 4 cups beef stock
- 1 ½ c chopped onion
- 1 cup uncooked barley
- 1 cup water
- 1 cup sliced celery
- 1 ½ tsp salt
- 1 tsp pepper
- 6 garlic cloves minced
- 4 large thyme sprigs
- 3 bay leaves
- ¼ cup tomato paste
- 2 tbsp olive oil
- 2 lbs beef stew meat
- ½ c carrot pieces
Instructions
- Brown the beef and sauté the onion.
- Add all ingredients into the crock pot. Cook until meat and grains are tender (8 hrs on Low).
