Beef and Barley Stew

Ingredients
  

  • 4 cups beef stock
  • 1 ½ c chopped onion
  • 1 cup uncooked barley
  • 1 cup water
  • 1 cup sliced celery
  • 1 ½ tsp salt
  • 1 tsp pepper
  • 6 garlic cloves minced
  • 4 large thyme sprigs
  • 3 bay leaves
  • ¼ cup tomato paste
  • 2 tbsp olive oil
  • 2 lbs beef stew meat
  • ½ c carrot pieces

Instructions
 

  • Brown the beef and sauté the onion.
  • Add all ingredients into the crock pot. Cook until meat and grains are tender (8 hrs on Low).
