My cheese platter features Stella Fontinella cheese, three colors of apples, crackers, bread, and honey.  While it may sound like a bit of an odd pair, the honey brings out the richness of the cheese and is so delicious.  Just spread some honey on your bread and top with cheese.  MMM.

Garden Scallion and Cheddar Cornbread

Cheddar Cornbread

This is the first year that I tried my hand at gardening.   I saw a post showing how to regrow scallions and I decided to try it out.  After buying a bundle at the grocery store last May, I’ve been regrowing the scallions ever since!

I found a recipe that was just about what I was looking for and substituted out quite a few ingredients.  The only thing that I didn’t consider was the quantity.  The batch was huge!  It filled up one 12 cupcake tray, one 24 mini-muffin tray, and one tortilla tray.

Instructions
  1. Preheat oven to 350 F.
  2. Combine the wet ingredients in a bowl.
  3. Combine the dry ingredients in a second bowl.
  4. Stir the dry ingredients into the wet ingredients slowly.
  5. Fold in half of the cheddar and scallions.
  6. Pour the batter into any greased pans and top with the remaining cheddar and scallions.
  7. Bake for 25-35 minutes, or until a toothpick comes out clean

Cheese Doritos Meatballs

This recipe comes from the ‘Beef it’s What’s For Dinner: Thirty Meals in 30 Minutes’ recipe book.

I’m a big fan of cute appetizers but I always find that when it comes time to host a party I don’t want to try anything new just in case it doesn’t turn out.  Because of that, every so often, I made little appetizer sized lunches to try out new things.

This has been one of my favorite recipes because it’s so easy and tastes delicious.

Ingredients

  • 1 pound Ground Beef
  • 2 tablespoons taco seasoning
  • 1 can mild green chilies
  • 16 cubes of Cheese (1/2″)
  • 1 egg white
  • 1 tablespoon water
  • 2 cups crushed nacho cheese-flavored tortilla chips

Sauce

  • 6 tablespoons thick taco sauce
  • 3 tablespoons honey

Instructions

  1. Preheat the oven to 400*F.
  2. Combine beef, taco seasoning and chilies.  (I left out the chilies)
  3. Divide the mixture into 16 portions and set aside.
  4. Cut 16 cubes of cheese
  5. Wrap each portion around a cube of cheese
  6. Beat an egg white into a bowl (I used the whole egg)
  7. Dip the meatball into the egg and fully coat then press the meatball into the chips (I used Spicy Nacho Doritos).
  8. Place the meatballs on a greased baking pan and cook for 15 – 20 minutes.  (Be careful to watch as it gets close.  The cheese all melted out a bit too much for me)
  9. Combine the sauce ingredients into a bowl for serving.
