Freezer Meal Prep for Busy Weeks
If you’ve ever thought about making a mountain of breakfast burritos in one go, you know it sounds crazy… until you actually do it. That’s exactly what I tried this weekend — my goal was 100 burritos in under an hour. Spoiler alert: I didn’t quite hit 100, but I ended up with 87 freezer-ready burritos in just an hour and a half.
Here’s how it all went down, including tips to make your own mass breakfast prep a little less chaotic.
Getting Started: Prepping for Speed
It was 11:00 am on the dot when I started. I had a few pots and pans ready, preheated the oven, and set up my Ninja Crock Pot to cook the eggs. The goal was efficiency — multitasking everything at once:
- Steak and sausage for protein
- Eggs cooked in the Crock Pot to save time
- Tater tots and potatoes for extra filling
- Pre-diced onions (my little “cheat”)
Before diving in, I had to get my hair tied up and mentally prep. Breakfast burritos are filling, delicious, but messy, and there’s no room for hesitation when you’re trying to hit high numbers.

Cooking the Ingredients
I divided the cooking into two main sections:
- Sausage, eggs, cheese, tater tots
- Steak, potatoes, eggs
Some key lessons:
- Canned potatoes vary in color; purple potatoes are darker than white ones.
- Eggs need a little water whisked in for fluffiness.
- Salt, pepper, and seasoning are added gradually — too much too soon can overpower flavors.
- Multitasking is essential; while eggs cook, meat can be chopped and tater tots crisped.
The Rolling Process
Once all the fillings were ready, the real work began: rolling the burritos. This is where things slow down. Even though I prepped ingredients quickly, each burrito still takes time to fill and wrap.
- Started rolling around 12:01 pm
- By 12:07 pm, 20 burritos were done
- By 12:17 pm, about 50 burritos completed
- Final count: 87 burritos
Tips for rolling efficiently:
- Don’t overstuff; too much filling can cause them to explode when reheated.
- Use a consistent layer of eggs, meat, cheese, and potatoes/tater tots.
- Keep your workstation organized for smoother workflow.
Freezer Storage & Meal Planning
These burritos are perfect for the freezer, lasting about 3 months. That means I won’t need to make breakfast burritos again anytime soon — saving time and stress during busy mornings.
Other benefits:
- Quick breakfast for two (or more) without daily prep
- Easy to microwave individually or in batches
- Great way to use leftover ingredients efficiently
Final Thoughts
Even though I didn’t hit my ambitious 100 burritos in an hour goal, I still ended up with plenty of breakfast options for the next few months. The kitchen may have been a little messy, but the payoff was immense — happy faces at the table and stress-free mornings for weeks to come.
Meal prep like this may seem intimidating, but with preparation, multitasking, and realistic expectations, it’s absolutely doable.
