Add flour and salt to the mixer
Turn the mixer on low speed
Add in one egg at a time while the mixer mixes
Add water as necessary until the dough starts to come together. Dough needs to be on the dryer side so add water slowly
Let mix in the mixer until it starts to come together.
Take the dough out of the mixer and kneed it until it is smooth.
Roll the dough into approximately a 1 - 1.5 inch wide tube
Let dough sit for 20-30 minutes to let the glutens relax
Feed the dough into the hopper
Turn on the Kitchen aid, using the speed noted for the type of pasta you are making.
