  1. Preheat oven to 350 F.
  2. Combine the wet ingredients in a bowl.
  3. Combine the dry ingredients in a second bowl.
  4. Stir the dry ingredients into the wet ingredients slowly.
  5. Fold in half of the cheddar and scallions.
  6. Pour the batter into any greased pans and top with the remaining cheddar and scallions.
  7. Bake for 25-35 minutes, or until a toothpick comes out clean
